Yeah, I told ya I'd be back, for the .18 person readin' this. My opinion still holds for Breaking Bad, but It got me craving my new drug...THIS! I'm goin for marathon round two of the Tunes. More Swedish Opey but the CD changer is on random with some KISS Alive II, Mercyful Fate, Soundtrack to Lost Highways, and Sade in between. I told you my tastes in tunes are Various and I'm just gettin' warmed up. Speaking of warmed Beavis and Mrs. Stewart...I've gotta tell you about these Fried Catfish Tacos I made earlier! Healthy is good in between Hot Wings and Pizza!
Get 2 cups of flour
1.5 Tsp (Teaspoons not Table spoons) of bakin powder...You do have some you just don't know it!
1 Tsp Salt...
put all 3 in a bowl
get another bowl and put a little short of a cup of WARM H20 (water)
and 2 Tsp of oil...veggie, olive, canola, peanut...OIL! in the bowl with the water
SLOWLY add the H20 and oil mix to the dry goods as you mix, stir, or whatever (like a TBSP at a time)
Once it starts gettin all gooey and stuff, ball it all up and knead it. squeeze it, roll it. Use the palms of your hands to work it on the counter, or cutting board, or just something stable and flat! add a lil more flour to the surface if ya have to. That'll make it a lil less sticky. Once the dough is smoothe and in a ball, or you're just tuckered out, put the dough in a bowl and cover with a damp towel and let it just BE for about 20 minutes or so. Nows the time to fix another drink, have a smoke or change the death metal on the CD player to pat boone or that self help book on audio... or vice verca.
After the 20, get a lil nib (pinch) of the dough and roll it into a ball round the size of a golf ball or a lil bigger if you wish. Do this with the rest and place on a plate for another 10 minutes and cover with that damp towel. If ya wanna wait a lil longer, thats fine, just make sure the towel remains smewhat damp.
When you get hungry, cut an eye of the stove on to medium- a lil below medium- with a skillet of some sorts. Or if you have a Tortilla press/tortilla cooker, well, you've just made your taco's, quesadillas, etc meet your mouth alot faster! Flatten the balls in the pan or tortilla press and let cook for no more that about 30 sec to a min (on each side if in a skillet). Place 'em on a plate in between some damp paper towels till ready to fill, stuff, or whatever.
There, you've got some DAMN good tortillas for just about anything. Great for absorbing those few extra cocktails you had while preparing them. They'll be good for a few days as long as you put them in a zip lock back with a damp towel or two. When you need'em just zap in the microwave for about 15-25 seconds. sprinkle with a lil water before zapping with make sure they're soft. I know this might sound like a lot of work to some, but, its really not. You'll be dissappointed with the store bought after you do these though. They're good even by themselves with some salsa and/or cheese if you're lazy or in a hurry...I'm leaving what to stuff them with up to you...Next time, Corn Tortillas! They're even easier!
